Corn and barley warm salad

Boiled Barley for the Barley and Corn Salad.

Ingredients:

1 cup fresh or frozen corn

1 cup barley

1 teaspoon Italian seasoning

2 tablespoons finely chopped parsley½ teaspoon salt

Juice of ½ lemon

2 tablespoons olive oil

 

Method:

  1. Wash and soak Barley for one hour.
  2. Drain and cook over stove till tender.
  3. Wash in running water in a colander and let dry.
  4. On another stovetop, boil corn for 7-8 minutes till tender.
  5. Heat a non stick skillet on medium high flame and add corn.
  6. Add the 2 tablespoons oil.
  7. Roast the corn till brown marks show, raising the flame if needed.
  8. Add in the boiled barley and continue roasting and mixing.
  9. Add salt and Italian seasoning, mixing them into the corn and barley till the mix looks nicely blended.
  10. Remove the pan from the stove and add the juice of half the lemon and the parsley. Mix.
  11. Take out in a serving bowl.
